Three Bean Dahl

I've revisited a beautifully written book titled Vegan Planet. Although I'm not a vegan I do value the healthy recipes I find in these types of cookbooks. This one is particularly amazing, you don't feel like its vegan. She'll use interesting ingredients that are not hard to find and keep in stock, but mix them with old standards. For example in the recipe that follows, you'll use 5 different spices but you'll so happy you did the flavor combination is very authentic, or at least similar to what you'll get at a good Indian restaurant. But you'll find that the spices and maybe the fresh ginger and cilantro will be the few ingredients you'll have to double check for in your pantry. The rest are basically old standbys. Truly an excellent recipe. Please enjoy it as much as I have.

Blue Corn Posole Stew

Blue Corn Posole
I just love posole. I tried it for the first time in Flagstaff, AZ at a tiny restaurant named Martin's. After that initial taste I've been searching for a good and simple recipe that I could make on a cold New Mexican night. While exploring New Mexico I stumbled upon a fruit stand that also had a wide variety of dry foods including (to my surprise) "blue" posole, which I had never heard of! I did my research and found this recipe to try and I really like it. Happy cooking!

"Better For You" Oatmeal Chocolate Chip Cookies

I'm finding that Sunday's are my day to putz around the kitchen. I'll spend all week browsing recipes in my free time and make sure I get what I need for Sunday. Sometimes I even start cooking Saturday evening and go throughout the day Sunday. I really wanted to my friend some cookies when she and her husband invited my fiance and I to dinner. I was a little disappointed when the cookies that actually looked like cookies were voted second when pitted against these Chocolate Chip Cookies. I'm still learning how to bake at such high altitudes (approx 9000 ft)...So sometimes cookies turn out more like Florentines. And thankfully they are gobbled up by everyone. Happy baking!

Herb Beer Bread
I've been looking through the cabinets and finding herbs and spices that I been hanging onto for some time now. It's not as if I've forgotten about them either, I just don't seem to choose recipes that include them. With that said I've been searching for recipes that include them and not in a modest amount, in a substantial way. Dried Dill weed being the first on the list. This herb found its way into to my pantry by way of a Sole Florentine recipe someone had clipped out of a health magazine. It used about 1 tablespoon so it made sense to me to that I purchase a large jar. In my travels I've misplaced the recipe and now that I live up in the mountains I don't get my hands on fish as often as I used to. I searched my recipe archives and found a bread recipe that uses a it and does not use yeast, to my surprise it uses beer. Being that its after Christmas and my hubbies birthday needless to say we have some stragglers around the house, unopened of course. It makes sense that beer could sub for yeast but I had never tried baking anything like it before now. Here's the recipe I chose...
